Smart Yacht Charter Recipes - Perfect Curry

Catering for a family on a yacht charter needs some forward planning.

It's not like home. The fridge is a little smaller. You have just 2 stove rings to work with. And you're on holiday!

You want to eat good food but spend maximum time relaxing and minimum time in front of the stove.

Follow our yacht charter recipes and you can enjoy fantastic food on board your yacht with work for you.

Here's a fantastic chicken, fish or vegetable curry based on a Jamie Oliver recipe.

It's fresh tasting and if you make it mild it goes down well with all the family.

We tend to prepare the sauce at home and freeze it in a plastic box. That way it stores well in the yacht fridge, and it's really quick to add the sauce to the fish or chicken while you cook the rice.

This quantity serves 4

  • 4 tablespoons of vegetable oil
  • 2 teaspoons of mustard seeds
  • 3 fresh green chillies (use 1 if you like your curry mild)
  • 2 thumb-sized pieces of fresh ginger peeled and grated
  • 3 cloves fresh garlic chopped
  • 3 onions peeled and chopped
  • 1 teaspoon chilli powder
  • 1 teaspoon turmeric
  • 6 tomatoes chopped
  • 1 x 400ml tin coconut milk
Relax

Heat the oil in a pan till hot then add the mustard seeds. Wait for them to pop then add the green chillies, garlic and ginger. Stir and fry for a few minutes.

Chop the onions in a food processor and add to the pan. Cook for 5 minutes until the onion is light brown and soft.

Add the chilli powder and turmeric. Put the tomatoes in the food processor (no need to wash the processor) pulse and add to the pan.

Cook for a couple of minutes. Add 2 wine glasses of water and the coconut milk. Simmer for 5 minutes and season with salt.

When cool put into a plastic box and freeze.

When you're ready to cook on board.

For chicken stir-fry or barbeque chicken breast strips then add them to the sauce and warm the sauce through. We also add a handful of baby spinach just before we serve it.

For the vegetable version add potatoes, sweet potatoes carrots and lentils to the sauce when you add your onions. Then on board add some fresh green beans and spinach.

And if you are lucky enough to catch a fish...

... you can cut it into strips and add it to the hot sauce to cook the fish through.

Serve with basmati rice. Delicious!
